Stir in broth and lentils, increase heat to medium-high and bring to a simmer. Add the chicken broth or water and lentils and bring to a boil. Reduce the heat to maintain a very gentle simmer and add the chicken. Transfer the chicken thighs to a plate to cool.

- Heat oil in medium pan, add garlic, chilli flakes and onions, until onions are translucent, add chicken, stir and cook until chicken has changed colour. - You could add a cup of white wine and reduce stock to enhance the flavour
